Get it in writing before the work starts

Most contracts only oblige the other side to pay for changes properly instructed. If work must start before the paper arrives, send your own written confirmation of the verbal instruction the same day, state that you treat it as a variation, and give the recipient the chance to correct you. If they disagree, they have to say so in writing at the time.
